How do I setup a global filter to block all email sent to the server with certain words in the Body, Subject or Header?

You can't do that with the MailScanner Front-End. Your best bet would be to write your own spamassassin rules (see https://cwiki.apache.org/confluence/dis ... itingRules). Or you could look into using exim filters.
